Back in 1985 I was on a vacation trip through Nova Scotia -
driving everywhere for 2 weeks. It was wonderful.
By chance I stopped for dinner at Zwicker's Inn.
The food was superb! I fell in love with Jack's lamb shanks
and when I got back home to upstate New York, on a whim
I called and got Jack on the phone.
I asked him if he could send me the Lamb Shank recipe.
He said it wasn't really written down in a presentable
form to mail (no email yet!) but if I held for a bit he would
get it and dictate it. That recipe cost me a fortune in long
distance phone bill, but it was worth every second!
Of course the recipe was for 16 or so lambshanks so
on the phone he calculated the ingredients down to
a more manageable 4 lamb shanks. In his honor
I wish to share that recipe so it isn't lost forever:
4 Lamb Shanks

1 cup ketchup
2 cups water
2 cups beef broth
1/4 cup apple cider vinegar
2 tablespoons brown sugar
1 tablespoon worcestershire sauce
2 tablespoons lemon juice
2 tablespoons Japanese soy sauce
2 tablespoons creme de cacao
1 tablespoon bourbon
1/2 teaspoon garlic powder
1/8 teaspoon celery salt
1/16 teaspoon ground nutmeg

Later
5 tablespoons arrowroot dissolved in cold water

1) Bring liquid to a boil, let it cool
2) Bring to a boil again and add lamb shanks
3) Either transfer to a crockpot on low for overnight
or simmer on top of stove for 2.5 hours
4) Carefully remove shanks
5) Bring to quick boil and reduce liquid, constantly stirring
6) Once mixture thickens enough to lightly coat spoon,
slowly add arrowroot mixture, whisking constantly
7) Serve over noodles (fettucine cut)

Jack was a very talented and educated man ! But he also was a man of compassion - he helped people in need with kind words and also financially . Im sure there are a number of people missing Jack - people who experienced his kindness personally ! I pray peace on his family and love and blessing To my dear friend Katherine ! Jack and I were classmates at Wallace High and earlier. I think we were friends from first meeting. Not because of me but because he was just that kind of friendly guy.
During our high school years, we shared a lot of things in common--academics, newspaper carriers, friends. Yet we were different and took different paths through life.
But we remained friends and periodically renewed that friendship by recounting memories held in common. There is now a void in the world space that used to contain Jack. The world has become a more silent place, devoid of the enrichment that came with Jack.
I pray that he may rest in peace, and thank God that I was able to share a little of his life.

Jack was a classmate of mine at Wallace High School from 1951 to 1955.
a great student and good friend. sorry for the loss of Jack to the Sorenson family.

A warm farewell to Jack, a good friend who I have known since assisting in his emigration to Canada in the 1970s. His many faceted life gave many contributions to the life of Nova Scotia. He did not deserve the interruption of his death wish.

I first met Jack and Katherine in August 1980 when they hired me as a dishwasher for The Zwicker's Inn in Mahone Bay. This was my first "real" job at 16 years of age and I always greatly appreciated their kindness, and for giving me the opportunity to earn money for university. I can vividly remember the smell of freshly baked rolls by Betty and the friendly kitchen staff, like Peggy and Mark. The food was second to none, especially the homemade ice cream! I loss touch with Jack and Katherine after I left Zwicker's Inn to pursue my university career. Unexpectedly, Jack emailed me back in May 2018 after finding out that I was a professor at the University of North Dakota. Since he had taught in North Dakota in the late 1960s, he seemed intrigued by the fact that a former employee was now doing something that he had done many years ago- teaching in North Dakota. I was shocked to learn of his passing and regret not having a chance to visit him one last time. I will never forget the role that Jack and Katherine played in my transition from high school to university student in pursuing my dream of becoming an astronomer. I still have the book "Cosmos" by Carl Sagan that Jack and Katherine gave me as a high school graduation gift. May he rest in peace...

I will always remember him as Professor Sorenson, having studied with him at Dal in 1972/73 and 1973/74. He was interesting, and compelling as a teacher. He was one of those teachers you just don't forget. Knowledgeable, kind, and so approachable. During my career teaching music to children and adults, I aspired to be the kind of teacher he was.
